Our Story

Our Story

Welcome and thank you for your interest in what we are creating at Adega Vinho! We are so excited to share our story and mission with you. Adega Vinho Winery is a collaboration of ideas, dreams, visions and our different personalities. Our family and friends, travels and our life experiences have all added important pieces to the mosaic we are actively growing for you in Stonewall, TX.

Our place in the Texas Wine Industry is determined by our ability to give you a unique and memorable experience built around our hand- crafted wines. Our mission at Adega Vinho is to provide you much more than a glass and a taste of our wine. The mission of creating a place that stimulates the Hill Country Wine experience through our wines, vineyards and unique spaces drives our daily effort.  Will we try to appeal to everyone? No. Absolutely not. Our family and staff will work tirelessly to keep your attention through our wine offerings and we trust that you will make Adega Vinho your choice to spend an afternoon, an evening, or an entire weekend.

Breaking Ground

The Bilger Family broke ground on the vineyard located along County Road 1623 in southeast Gillespie County in the summer of 2016.  The preparation of the land was truly a family undertaking. From the beginning, Michael, our head winemaker and Andy’s brother, was tasked with preparing the land for planting of vines in the spring of 2017. Taking a three month sabbatical from work, which turned into a multi-year commitment, Michael worked with the family seven days a week to ready the land. After clearing the property of old peach trees, giant Mexican Sycamores, old fencing, driveways, sheds, weeds and natural grasses, the job of trellis building began. By early March 2017 the grass and trees gave way to stakes, trellises and vines. By mid summer of 2017 the land that one year prior had raised very little, now grew Vitis vinifera.

As stated in our Mission Statement, the Bilger Family is deeply dedicated to being good stewards of our land, adhering to sound agricultural practices, spending locally within our community, and humbly giving back to our neighbors through our time, service, and profits. 

We are determined not only to say these words but stand behind them in actions and be accountable to our community. Please check back often as we intend to add to our list of how we give back.

Annual scholarships for FFA students

We are honored to provide annual college scholarships. These are granted to graduating high school seniors participating in FFA who have an interest in studying viticulture in college. Qualifying seniors at the following Texas high schools may apply for a $1500 scholarship (one scholarship is awarded per school):

  1. Fredericksburg High School in Fredericksburg, Texas
  2. Lyndon B. Johnson High School in Johnson City, Texas

All applications are due by April 15th each year. Scholarships are awarded before graduation in May in coordination with each school’s FFA sponsors.
